To Stewe Steaks of Mutten
Ye Olde Recipe
Take a leg of mutton and cut it into small slices. Put it in a pan over heat, and add a pottell (2 quarts) of ale and skim it clean. Then put in seven or eight onions thinly sliced, and after they have boiled for one hour add a dish (cup) of sweet butter and boil until tender. Then add a little pepper and salt. Modern Version
Ingredients: 2lb (approx 1kg) cubed leg of lamb, 1 pint of Guinness, 2 large onions sliced, salt and pepper to taste, 2 oz (50g) butter, 3 slices of brown bread cubed and with crusts removed
Method: Place the meat and onions and pour the Guinness into a casserole. Simmer on the hob for one hour until the meat is tender.
Add salt and pepper to taste.
Add the butter and stir.
Place the cubed bread in a deep serving dish.
Pour the stew over and serve.
